Field Greens

Last night the kids and I went to a backyard BBQ to celebrate a birthday. The hostess was one of my very favorite girlfriends and her husband was the birthday boy. I adore being a guest at their house, because they always have the best parties with tasty food and fantastic company. They made a wonderful batch of guacamole, a traditional pasta salad, and they fired up the grill for sausages, chicken, and steak. I hate showing up to a party with empty hands, so I brought a field green salad, which was well received, so I thought I would share. To make this salad, you need:

  • organic field greens
  • organic braeburn apples, sliced
  • spring onions, diced
  • basil, chopped
  • blue cheese crumbles
  • celery, sliced thinly

I tossed those ingredients in a pretty bowl and took a jar of blue cheese dressing, which worked out really well. Blue cheese really makes a salad feel hearty, even though it’s just a salad. I will surely make this salad again, and also I think I will always take a salad to parties in the future. We all could use more greens, you know?

    yum, yum and yum!
And oh how I love guacamole as well. Can’t wait for fresh local produce. For now I will have to replicate with not-so-local.
