So you only have an hour for lunch and you aren’t in the mood to go out? Try this: buy a package of soy bean sprouts and any hearty winter greens, like bok choy or collard greens. Wash, dry and chop these two ingredients. Then add a tablespoon of sesame oil and one tablespoon of olive oil to a skillet over medium heat. Add the greens and sprouts, and gently cook until they are tender. And a pinch of salt or soy sauce and a bit of freshly ground pepper, turn off the heat, cover, and let it sit for about three minutes. Then spoon this warm salad into a bowl and enjoy as a side dish, or in my case, lunch! What a healthy, tasty salad! It’s full of fiber and lots of good stuff that your body needs, and it might take fifteen minutes to make from start to finish. The shopping will take you longer, but if you plan ahead and have these things in your fridge, you can have a wholesome, delicious meal for a few dollars at home in a few minutes. Fantastic!
